200g garden peas
200g potatoes
200g leeks
1 white onion
1 clove of garlic
300ml vegetable stock
Black pepper
Rapeseed oil
Mint
Pumpkin seeds to garnish
Step 1.
Finely chop your onion and garlic and add to a deep pan with heated oil
Step 2.
Sauté your onion and garlic until the onion goes soft
Step 3.
Peel your potatoes, peas and chop your leek
Step 4.
Add your leek to the onion and garlic mix, brown slightly before adding your potatoes and stock
Step 5.
Bring to the boil and simmer for 15 minutes until the potatoes go soft
Step 6.
Finally add your peas for a final 5 minutes
Step 7.
Add a small handful of mint and using a handheld blender blitz your mix until smooth
Step 8.
Serve and garnish with pumpkin seed
